The best espresso in Texas?

Chef Andrew Weissman of Il Sogno in San Antonio — slated to open tomorrow, see details below — may make one of the meanest espressos this side of the Mason-Dixon Line but the title of “Best Espresso in Texas” is still held by Austin’s Jeff Courington (above), owner Vino Vino, where the Mosaic Wine Group staff can found on many long hot summer afternoons, sipping the java and enjoying the FREE and super-fast wi-fi. Most folks think of Vino Vino for the best natural wine list in Texas but we go there for the espresso, too. Check it out:

The best sommelier in San Antonio: Fabien Jacob, Le Rêve

fabien_jacobThe people of San Antonio have spoken: the San Antonio Current readers poll has named Fabien Jacob “the best sommelier in San Antonio.”

A native of Lyon, France, Fabien resides over one of the top cellars in San Antonio at chef Andrew Weissman and his wife Maureen’s celebrated restaurant Le Rêve. The following is an excerpt from a recent profile of the Weissmans published by OnTheTownEzine:

Sommelier Fabien Jacob has a knowledge of wine and cuisine that belies his 32 years. Born in Lyon, France, Jacob started his career in restaurants at the age of 12, and his resume includes working for one of the legendary founders of Nouvelle Cuisine, Paul Bocuse.

But while attending chef school, he realized he preferred working the front of the house. “I didn’t like to be in the kitchen; I like more contact with the customers,” he said. His decision proved to be a good one: his keen palate, passione for his work and attention to customers is a perfect fit for Le Rêve.

In describing how to pair wine with a particular dish, Jacob said, “There are always key components you have to look at: acidity, earthiness of the dish, is it rich, like with the taste of butter, or is it steamed? I determine the flavor profile of the dish and then what goes with it… I want to emphasize the flavor of the dish, not the wine.”

To illustrate he compared the food at Le Rêve to a beautiful painting. “The main focus of the restaurant is the food,” he said. “I just want [the wine] to be a frame around that.”

Congratulations Fabien! No one deserves it more than you. Chapeau!

Andrew Weissman receives James Beard nomination for Best Southwest Chef

Chef Andrew Weissman (chef and owner of Le Rêve in San Antonio, pictured above with his wife Maureen) has been nominated by the James Beard Foundation for Chef Southwest Chef. Congratulations, Andrew! Mosaic Wine Group will be rooting for you in May at the awards!

It sure beats working: taking time out for oysters at San Antonio’s Sandbar

Mosaic Wine Group took time out at the end of a busy day working the streets of San Antonio for raw oysters and Muscadet (a classic Loire pairing). We were impressed by the freshness of the seafood, which is flown in daily and the wine list, with a good selection of classic French whites, like the Château de la Ragotière Muscadet Sèvre et Maine 2007 (we couldn’t find Château de la Ragotière’s website but we did find this informative PDF, which is worth downloading if only to view the “the noble Loré de la Ragotiere family” Beatles haircuts! The wine was delicious, btw).

After our snack, we stopped by La Rêve, Andrew and Maureen Weissman’s award-winning French restaurant. They will be opening their new Italian restaurant Il Sogno later this year (La Rêve means “the dream,” as does Il Sogno). Andrew just received a semi-finalist nomination as Best Chef in the Southwest by the James Beard Foundation. The finalist nominations will be announced on March 23 and the awards ceremony will be held in New York City on May 4. Congratulations Andrew and Maureen! We’ll be keeping our fingers crossed!
