Restaurant Ava inaugural wine dinner with Mosaic Wine Group

Mosaic Wine Group recently had the opportunity to spend a wonderful evening of great food and wine in Rockwall, Texas, hosting the first wine dinner at Restaurant Ava. The spectacular six-course dinner was paired with a selection of wines from the Mosaic Wine Group portfolio and was a fantastic way to launch their wine dinner program. Chef / Owners Randall Copeland and Nathan Tate pulled out all the stops for this menu and the crowd was delighted with the seamless stream of food and wine pairings.menu

Greeting guests was a trio of hors d’oeuvres, including a White Gazpacho Soup, Jonah’s Crab Salad and Chicken Confit with Shiitake Mushrooms on Toast Points paired with the 2007 Bisol Crede Prosecco.

First Course was a ‘Fig Duet’, which included a Turkish Fig Tart with Paula’s Goat Cheese and Golden Celeste Figs drizzled with fresh orange blossom honey. This was paired with the 2007 Abbazia di Novacella Kerner, from this historic producer in Alto-Adige, founded in the year 1142.fig duet

Second course was an absolutely brilliant butter-poached lobster with taragon, lemon verbena and a house-made sweet corn tortelloni. This creamy-textured dish was paired with the well-structured 2007 Chateau Graville-Lacoste, a White Bordeaux from Graves.

butter poached lobster 2 Moving on, the next course was one of the crowd favorites of the night – a wood grilled pork loin with potato-leek perogi, mustard greens and a whole grain mustard jus, which paired incredibly well with the 2007 Laetitia Estate Pinot Noir from Arroyo Grande Valley in the Central Coast of California.

The fantastic menu pairings continued with a smoky Meyer ribeye pave and fresh basil, kalamata olives and local tomatoes, which was an incredible compliment to the 2007 Aglianico from Terredora di Paolo in Campania.meyer robeye pave

After an intermezzo of fresh local peach sorbet, the night was capped off with a delightful dessert to remember – (friend of the family) Eileen’s Carrot Cake served with a carrot-reduction and cream cheese ice cream, paired with a Muscat Beaumes de Venise from producer Domaine du Durban in the Southern Rhone Valley of France.

It was certainly an evening to remember for those able to attend. Rockwall is just a short drive from downtown Dallas, and you should check this restaurant out as soon as possible. Their philosophy of utilizing local farmers, the freshest produce and meats available and (of course) supporting the portfolio of Mosaic Wine Group make this a restaurant destined for long-term success!
