Restaurant Ava inaugural wine dinner with Mosaic Wine Group

Mosaic Wine Group recently had the opportunity to spend a wonderful evening of great food and wine in Rockwall, Texas, hosting the first wine dinner at Restaurant Ava. The spectacular six-course dinner was paired with a selection of wines from the Mosaic Wine Group portfolio and was a fantastic way to launch their wine dinner program. Chef / Owners Randall Copeland and Nathan Tate pulled out all the stops for this menu and the crowd was delighted with the seamless stream of food and wine pairings.menu

Greeting guests was a trio of hors d’oeuvres, including a White Gazpacho Soup, Jonah’s Crab Salad and Chicken Confit with Shiitake Mushrooms on Toast Points paired with the 2007 Bisol Crede Prosecco.

First Course was a ‘Fig Duet’, which included a Turkish Fig Tart with Paula’s Goat Cheese and Golden Celeste Figs drizzled with fresh orange blossom honey. This was paired with the 2007 Abbazia di Novacella Kerner, from this historic producer in Alto-Adige, founded in the year 1142.fig duet

Second course was an absolutely brilliant butter-poached lobster with taragon, lemon verbena and a house-made sweet corn tortelloni. This creamy-textured dish was paired with the well-structured 2007 Chateau Graville-Lacoste, a White Bordeaux from Graves.

butter poached lobster 2 Moving on, the next course was one of the crowd favorites of the night – a wood grilled pork loin with potato-leek perogi, mustard greens and a whole grain mustard jus, which paired incredibly well with the 2007 Laetitia Estate Pinot Noir from Arroyo Grande Valley in the Central Coast of California.

The fantastic menu pairings continued with a smoky Meyer ribeye pave and fresh basil, kalamata olives and local tomatoes, which was an incredible compliment to the 2007 Aglianico from Terredora di Paolo in Campania.meyer robeye pave

After an intermezzo of fresh local peach sorbet, the night was capped off with a delightful dessert to remember – (friend of the family) Eileen’s Carrot Cake served with a carrot-reduction and cream cheese ice cream, paired with a Muscat Beaumes de Venise from producer Domaine du Durban in the Southern Rhone Valley of France.

It was certainly an evening to remember for those able to attend. Rockwall is just a short drive from downtown Dallas, and you should check this restaurant out as soon as possible. Their philosophy of utilizing local farmers, the freshest produce and meats available and (of course) supporting the portfolio of Mosaic Wine Group make this a restaurant destined for long-term success!

Fork sculpture artist files complaint with ACLU over censorship in San Antonio

Mosaic Wine Group has learned that San Antonio artist Gilbert Duran has filed a complaint with the American Civil Liberties Union after the Stone Oak Property Owners Association forced restaurateur Damien Watel to build a wall blocking Duran’s Fork sculpture from view.

The POA had claimed that the Fork was an authorized form of advertisement.

Watel and Duran contended that it was a work of art but were forced, nonetheless, on legal grounds to conceal the work from view from the street.

The complaint was reported today on the website of the San Antonio Express News, MySanAntonio.com.

Conceived by Italian wine expert and veteran restaurateur Michael Housewright, Block 7 Wine Co is sure to be one of the hottest new food and wine destinations in what is quickly becoming the haute cuisine capital of the southern U.S.

Last night’s Tuscan Wine Dinner featuring the Wines of Vias Imports was one of the best wine dinners we’ve attended in a long time. Nice work! Chianti Classico by Castello di Meleto

Sangiovese, Cabernet, and Merlot

Tasting notes: this wine was made in the top subzone of Chianti by one of the top winemakers in Italy today, Roberto Stucchi, who owns one of the most famous estates in Chianti, Badia a Coltibuono. This is a rich Chianti Classico, with aroms of red fruit and chocolate and tobacco undertones. Chianti Classico is known as “classico” or classic because its where the production of fine wine originated in Tuscany.

Rosso di Montalcino by Camigliano

100% Sangiovese

Tasting notes: this is a traditional-style Sangiovese, with classic plum flavors and aromas, and balanced, smooth tannin. A classic pairing for steak, this wine is made by one of the most famous producers of Brunello di Montalcino — one of Tuscany’s most prized wines. Younger vines make this wine more approachable at an earlier age.

Non Confunditur “NC” by Argiano

Cabernet Sauvignon, Merlot, Syrah, and Sangiovese

Tasting notes: a rich Super Tuscan from one of the greatest producers of Brunello di Montalcino. A great wine for the Napa Valley Cab lover, a great steak wine, and a great value for the quality. This 16th century winery has some of the best growing sites in the Brunello di Montalcino appellation thanks to the elevation of the vineyards. Freshness on the nose, clean flavors of red fruit with notes of tobacco, chocolate, and cigar box.

Mosaic Wine Group will be hosting the first ever wine dinner event at Restaurant Ava in Rockwall, Texas on Wednesday, July 8th 2009. The menu will feature a dynamic local menu created by Chef/Owners Randall Copeland and Nathan Tate, featuring the Biodynamic, Organic & Sustainable Old World & New World wines of Mosaic Wine Group. From the Old World, we’ll be selecting French wines from the Kermit Lynch Wine Merchant portfolio and Italian wines from the Vias Imports catalog. New World selections will include Laetitia Vineyards & Winery and and other producers from our portfolio.

Restaurant Ava is a beautiful new contemporary American restaurant located in the town of Rockwall, just East of Dallas. The restaurant opened in March and features a wonderful menu that is a straight forward approach to cuisine with an emphasis on fresh, local ingredients and sustainable products and producers. And we know when it’s good. At Dough Pizzeria Napoletana in San Antonio, pizzaiolo Doug Horn makes one of the best if not the best panna cotta we have ever tasted.

It’s kinda like the old saying, “if you can’t play guitar better than the gas station attendant one mile outside of Nashville, don’t even bother going into town.” The litmus test for every Italian chef is her/his panna cotta. If it don’t wiggle (keeping its shape), don’t even bother going into town.

Doug is famous for his authentic Neapolitan pizza. He serves Terredora Falanghina, Fiano d’Avellino, and Greco di Tufo by the glass — three classic Neapolitan white wines, made from ancient grape varieties recently revived by an archeologist of southern Italian winemaking, Lucio Mastroberardino (imported by Vias Imports).
